This Experimental Mead presents a luxurious sensory experience, anchored by an intense, jammy blackberry character developed through eighteen months of double barrel maturation. The initial profile is defined by concentrated dark fruit esters from Blackberry Brandy casks, which transition into the complex, vinous structure of Zinfandel oak. A dense honey backbone provides a viscous, "sticky" foundation, supporting layers of rich berry preserves and elegant wood tannins. At 14% alcohol, the warmth is significant yet refined, delivering a nectar-like finish that balances fruit acidity with the deep, layered complexity of extensive barrel aging.
Appearance. Deep, opaque royal purple with brilliant ruby highlights at the edges. High viscosity is evident through heavy legs or tearing on the glass; no head or lacing as is typical for a still or near-still high-gravity mead.
Aroma. High intensity aroma of concentrated blackberry jam and dark fruit. Potent notes of blackberry brandy provide a spiritous lift, complemented by the spicy oak and dark cherry characteristics of Zinfandel barrels. Subtle floral honey undertones are present beneath the heavy barrel and fruit influence.
Taste. Explodes with rich, sweet blackberry flavors and a thick, honeyed mid-palate. Significant complexity arises from the wood, introducing toasted oak, vanilla, and red wine tannins that balance the initial sweetness. The finish is long and jammy, with a pleasant tartness from the berries and a warming, vinous aftertaste from the Zinfandel and brandy interaction.
Mouthfeel. Full-bodied and exceptionally viscous with a thick, syrupy texture. Carbonation is absent. Significant alcohol warmth is present but integrated, providing a smooth, throat-warming sensation without harshness. Mild tannic astringency from the oak adds structure.
