This lush, viscous Experimental Mead unfolds with an intense, jammy essence of sun-ripened blackberries. The complex maturation journey—first in Blackberry Brandy barrels then in Zinfandel casks—infuses deep notes of dark fruit leather and refined oak tannins. Fragrant vanilla beans soften the bold 12% ABV, adding a creamy layer to the sticky, honeyed base. Expect a rich interplay of vinous acidity from the Zinfandel influence and a warming, spirituous finish derived from the brandy wood. It is a decadent, full-bodied experience where dark berries and aromatic spices linger elegantly on the palate, perfectly capturing the brewer’s intent of patient maturation.

Appearance. Deep, opaque purple to dark ruby hue; no head or lacing as a still mead; high viscosity is apparent by slow-moving legs on the glass.

Aroma. High intensity; dominant aromas of jammy blackberry and floral vanilla; significant oak character with notes of toasted wood and vanillin; vinous red wine notes from Zinfandel barrels and a subtle, spirituous brandy warmth; honey character is rich and caramelized.

Taste. Initial impression is intensely sweet and fruit-forward; rich blackberry preserves and dark honey flavors dominate; moderate acidity from the fruit and Zinfandel barrel provides balance; no hop flavor or bitterness; complex oak tannins and vanilla creaminess; finish is long, sweet, and jammy with a clean but notable alcohol presence.
