Aged in both rum and bourbon barrels, the profile is defined by layers of toasted coconut and earthy coffee, providing a distinctive tropical sweetness. Despite its 8.5% ABV, the beer maintains a surprisingly nimble drinkability. Notes of dark chocolate and roasted malt anchor the barrel-derived nuances of vanilla, oak, and spiced spirit, resulting in a complex yet balanced Spice, Herb, or Vegetable Beer that bridges the gap between a robust pastry-adjacent stout and a refined barrel-aged ale.
Appearance. Deep ebony to jet black (SRM 40+). The head is thick, creamy, and mocha-colored with moderate retention. Opaque clarity with oily legs that cling to the glass due to the coconut additions.
Aroma. High intensity. Dominant toasted coconut and fresh-ground coffee are layered over a rich base of dark chocolate and roasted grain. Barrel aging contributes significant vanilla, caramel, and a hint of spicy rum and bourbon. Low hop aroma and subtle dark fruit esters like raisin or plum.
Taste. Initial impression of sweet coconut and cocoa. The mid-palate reveals dark roasted malt and espresso flavors that provide a counterpoint to the tropical sweetness. Rum-derived molasses and bourbon-vanilla provide a smooth depth. Bitterness is moderate, derived primarily from roasted malts and coffee rather than hops. The finish is long and lingering with notes of toasted nuts and oak.
Mouthfeel. Medium-full body with a silky, viscous texture. Carbonation is moderate. Noticeable but well-integrated alcohol warmth from the barrel aging. Low astringency and high creaminess.
