Rosetta is a sophisticated Wild Specialty Beer crafted through the Belgian tradition of blending. This collaboration between Ommegang and Liefmans marries a tart Oud Bruin with the vibrant Cuvee Brut cherry beer. The result is a sensory experience defined by bright, macerated cherries and a deep mahogany hue. It offers a delicate balance of lactic acidity and residual sweetness, evoking notes of dark stone fruits and toasted malt. The fermentation profile provides a subtle funk and a crisp, refreshing tartness that cuts through the rich fruit character. Elegant and effervescent, it finishes with a lingering, wine-like complexity that honors the legacy of brewmaster Rosa Merckx.

Appearance. Deep reddish-brown to mahogany (SRM 22-26) with brilliant clarity. Pours with a moderate, pale pink to tan head that shows fair retention and leaves light lacing on the glass.

Aroma. Moderate to high intensity featuring dominant aromas of tart black cherries and red berries. Beneath the fruit, subtle notes of toasted bread and caramel from the malt base emerge, complemented by a mild, earthy funk and a sharp lactic tartness. No hop aroma is present.

Taste. The initial impression is a bright burst of tart cherry followed by a balanced sweetness. Malt flavors of caramel and crusty brown bread provide a sturdy backbone. The fermentation character is complex, with a controlled lactic acidity that balances the fruit. Bitterness is very low, allowing the tartness to drive the structure. The finish is medium-dry with a lingering cherry skin and toasted malt aftertaste.

Mouthfeel. Medium-light body with moderate to high carbonation that provides a lively, tongue-scrubbing prickle. Light alcohol warmth is present but well-integrated. A slight tannic astringency from the cherry skins adds structure without being harsh.
