This Belgian Tripel presents a sophisticated marriage of traditional monastic character and six months of maturation in Filliers barrels. A foundation of Pilsner malt provides a soft, grainy-sweetness, while the Belgian yeast drives a complex bouquet of clove-like phenols and citrus esters. The extended time in oak introduces delicate layers of vanilla and toasted wood, intertwining with the botanical, spirit-forward nuances inherent to the Filliers casks. Despite the 9% ABV, the profile remains remarkably dry and effervescent, leaving a lingering trail of spicy hops and refined wood tannins that elevate the classic profile into a deeper, barrel-matured experience.
Appearance. Deep yellow with golden highlights; SRM 6. Good clarity with an effervescent rise of bubbles. Features a long-lasting, creamy, rocky white head that leaves significant lacing.
Aroma. High intensity. Features a complex bouquet of peppery and clove phenols alongside moderate fruity esters of orange and ripe pear. The malt offers a light, honey-like Pilsner character, while the Filliers barrels contribute distinct notes of oak, vanilla, and a faint botanical gin-like spirit note.
Taste. The initial impression is a seamless blend of spicy yeast and soft malt. Low Pilsner malt flavor supports moderate peppery phenols and citrus esters. Hop flavor is low and floral, with a firm bitterness that is accentuated by the barrel tannins. The finish is very dry and crisp, with an aftertaste of spicy yeast, subtle oak, and a hint of grain spirit.
Mouthfeel. Medium body with a deceptively light presence for the gravity. High carbonation provides a prickly, effervescent mouthfeel. Alcohol warmth is noticeable but smooth and well-integrated, with a light, pleasant oak astringency on the finish.
