This decadent Imperial Stout pours an opaque ink-black, immediately releasing an aromatic symphony of roasted coffee and dark chocolate. The extended maturation in Cognac and maple syrup barrels introduces complex layers of velvety vanilla, rich caramel, and a distinctive zesty orange brightness. On the palate, deep nutty malt characters intertwine with the sweet, woody depth of the maple, while the Cognac influence provides a sophisticated warmth. It is a masterful fusion where the robust roasted grains harmonize with the spirituous cask nuances, resulting in a luxurious, lingering finish of bittersweet cocoa and citrus zest.
Appearance. Opaque black (SRM 40+). Dense, creamy dark tan to brown head with excellent retention and thick, persistent lacing.
Aroma. High intensity. Dominant roasted malt notes of espresso and bittersweet chocolate. Strong maple syrup sweetness blends with the vinous, spirit-like aroma of Cognac. Hints of toasted nuts, vanilla, and a bright, pithy orange ester.
Taste. Rich initial impression of dark fruit and roasted grains. Deep flavors of dark chocolate and cold-brew coffee. Mid-palate reveals earthy maple sweetness and caramel, supported by a nutty malt backbone. Cognac barrels contribute oak tannins and a refined orange liqueur character. Bitterness is moderate-high but balanced by significant residual sugar. Finish is long and warming with lingering cocoa.
Mouthfeel. Full-bodied and viscous with a thick, velvety texture. Low to moderate carbonation. Significant alcohol warmth that is smooth and well-integrated. Slight creaminess with a touch of oak-derived astringency.
