BrewDog’s Dog K is a decadent Imperial Stout that commands attention with its massive 11% ABV and multifaceted barrel treatment. At its core, dark roasted barley provides a profound foundation of bittersweet chocolate and espresso, further enriched by aging in maple syrup-infused Heaven Hill Bourbon casks. This maturation imparts luxurious layers of charred oak, vanilla, and woody sweetness. Simcoe hops introduce a distinctively resinous pine flair and bright citrus zest, cutting through the beer's inherent viscosity. The result is a harmonious, warming profile where the intense roast meets the smooth, spirit-forward complexity of the spirit barrels for a truly luscious experience.
Appearance. Opaque jet black (40+ SRM). Features a thick, persistent deep tan head with excellent lacing. High viscosity is apparent through visible legs on the glass.
Aroma. High intensity. Dominant dark roasted barley notes of espresso and dark chocolate are layered with rich bourbon, toasted oak, and vanilla. A distinct maple sweetness is present, alongside moderate esters of dried plums. Simcoe hops contribute a resinous pine character and a hint of grapefruit zest.
Taste. Intense and complex initial impression of bittersweet cocoa and charred grain. The mid-palate is dominated by bourbon-soaked oak and a smooth, woody maple richness. Firm hop bitterness and roasted tannins provide balance. Simcoe hops add layers of pine and citrus toward the finish. The aftertaste is long, featuring lingering dark fruit, warming alcohol, and espresso.
Mouthfeel. Full to very full-bodied with a chewy, velvety, and luscious texture. Carbonation is low to moderate. A smooth, significant alcohol warmth is present but well-integrated, with no harsh astringency.
