This indulgent Imperial Stout presents a decadent sensory profile inspired by Black Forest cake. After fourteen months in ex-Sherry whisky barrels, the beer reveals layers of bittersweet dark chocolate and rich cocoa maltiness. The addition of cherries imparts a bright, tart fruit character that cuts through the intense viscosity. Aromas of vinous Sherry, toasted oak, and a hint of spirituous whisky mingle with deep notes of plum and roasted grain. On the palate, the 11.3% ABV provides a smooth, integrated warmth, supporting a complex interplay of sweet fruit and charred malt before a long, luxurious finish.
Appearance. Jet black and completely opaque. A thin, dark tan head forms with moderate retention, leaving oily legs on the glass as it recedes.
Aroma. High intensity aroma featuring a rich blend of bittersweet chocolate, roasted coffee, and intense dark cherry. Distinctive Sherry notes provide a vinous, nut-like complexity, accompanied by subtle whisky-derived vanilla and charred oak.
Taste. Intensely flavored with a focus on dark roasted malts, cocoa, and tart cherry. The initial sweetness is countered by a firm roasted bitterness and oak tannins. Complex layers of dried fruit, plum, and a port-like Sherry character emerge mid-palate, leading to a warming, bittersweet finish.
Mouthfeel. Full-bodied and velvety with a thick, chewy texture. Carbonation is low, enhancing the beer’s lusciousness. A noticeable but smooth alcohol warmth provides a comforting presence without being harsh.
