Still Dreaming is a vivid Double IPA that elevates the sensory profile with an intense dry-hop regimen of Citra and Riwaka. It pours with a dense, persistent head, releasing a high-intensity bouquet of pink grapefruit and passionfruit from the Riwaka, underpinned by the signature lime and tropical mango notes of Citra. The palate is dominated by luscious stone fruit and citrus zest, supported by a clean, neutral malt base that stays out of the way of the hop saturation. Despite its 8.2% strength, the beer maintains a smooth, approachable character with a firm bitterness that cleanses the palate, leading to a dry, aromatic finish.
Appearance. Light orange to gold color (approx. 7-8 SRM) with a thick, long-lasting white head. Displays a prominent, opaque haze consistent with modern unfiltered style variants.
Aroma. High intensity hop aroma featuring powerful notes of passionfruit and grapefruit from the Riwaka, alongside lime and tropical mango from the Citra. A low, clean, grain-neutral malt presence supports the hops. Fermentation is clean with only a subtle hint of fruity esters and no solventy alcohol.
Taste. A bold explosion of tropical fruit and citrus hop flavors. Prominent notes of passionfruit, lime, and crushed grapefruit lead the palate. Bitterness is firm and assertive but smooth and never harsh. The malt character is low and neutral, providing a soft background. Finishes medium-dry with a lingering, resinous and fruity aftertaste.
Mouthfeel. Medium body with a smooth, soft texture. Carbonation is moderate. A gentle, well-integrated alcohol warmth is present at 8.2% ABV, without any astringency or burning sensation.
