This sophisticated Imperial Stout emerges from thirteen months of maturation in fifteen-year-old American oak barrels that previously housed Canadian maple syrup. The result is an intensely layered sensory experience where deep roasted malts of dark chocolate and espresso meet the distinctive, woody sweetness of maple. The American oak provides structural vanilla and toasted coconut notes, tempering the high alcohol warmth of this 13.5% ABV powerhouse. Expect a velvety, viscous liquid that balances charred grain bitterness with a lingering, syrupy richness, creating a harmonious interplay between the charred barrel character and the luscious, dark fruit esters of a classic big stout.

Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, deep tan to mocha head that shows moderate retention. Significant viscosity is evident through slow-moving legs on the glass wall.

Aroma. High intensity and complex. Dominant notes of bittersweet chocolate, roasted coffee, and black licorice are layered with rich Canadian maple syrup and vanilla from the American oak. Subtle dark fruit esters of raisins and prunes emerge as it warms, alongside a clean, integrated alcohol presence.

Taste. Initial impression is of intense dark chocolate and maple-infused maltiness. Mid-palate reveals charred grain, toasted oak, and a hint of wood tannin. Bitterness is firm but rounded by the residual sweetness of the maple. The finish is long and warming, featuring a blend of dark fruit, cocoa, and a lingering syrupy depth without being cloying.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the creamy mouthfeel. A smooth, noticeable alcohol warmth is present, reflecting its 13.5% ABV without being sharp or fusel.
