Imperial Stout 11 º
This Imperial Stout offers a luxurious, viscous experience driven by a heavy addition of oat malt and oat flakes. Extensive 16-month maturation in Irish grain whiskey barrels imparts sophisticated notes of vanilla, toasted oak, and a smooth spirituous warmth. The aroma is a deep blend of bittersweet chocolate, espresso, and dark dried fruits like raisins. On the palate, the oily texture carries intense flavors of roasted grain and cocoa, balanced by the whiskey’s honeyed sweetness. Despite its 11% ABV, the integration is seamless, finishing with a lingering, velvety complexity that showcases the brewer's intent for a dense, dessert-like sipper.
Appearance. Jet black and opaque (40+ SRM). Pours with a thick, deep tan head that shows moderate retention. High viscosity is apparent through prominent legs on the glass.
Aroma. High intensity. Rich dark chocolate, roasted coffee, and molasses dominate, complemented by significant Irish grain whiskey notes of vanilla, light coconut, and caramel. Esters of plum and raisin are present, while hop character is very low.
Taste. Bold initial impression of dark roasted grains and cocoa. The mid-palate reveals the smoothing effect of oat malt, alongside whiskey-derived oak and a subtle honey sweetness. Medium-high bitterness is balanced by a prominent residual malty sweetness. The finish is long and complex with lingering notes of roast, charred oak, and alcohol warmth.
Mouthfeel. Full to very full-bodied with an exceptionally oily, chewy, and velvety texture from the oat flakes. Carbonation is low to moderate. Noticeable but smooth alcohol warmth provides a comforting glow without being sharp.
