This Imperial Stout presents a decadent, multi-layered sensory experience, having matured for seventeen months in grain whisky barrels. The aroma is dominated by rich Mexican vanilla and charred oak, weaving through deep layers of bittersweet chocolate and espresso. On the palate, the whisky influence provides a smooth, spirited depth that complements the oily, viscous texture. Intense roasted malts provide a firm backbone, while the organic Mexican vanilla adds a creamy, marshmallow-like sweetness that lingers alongside notes of dark fruit and subtle wood tannins. It is a harmonious, warming, and remarkably complex sipper that showcases both patience and the influence of premium barrel aging.
Appearance. Jet black and opaque (40 SRM). Pours with a thick, dense, dark brown head showing moderate retention and leaving significant lacing. High viscosity is evident through visible legs on the glass.
Aroma. High intensity. Prominent Mexican vanilla and sweet marshmallow notes are layered over deep roasted malt scents of dark chocolate, cocoa, and black licorice. The grain whisky barrel contributes distinctive aromas of oak and light caramel. Low esters of prune and raisin emerge as the beer warms, accompanied by a clean, spirited alcohol presence.
Taste. Initial impression of rich, velvety sweetness followed by intense flavors of bittersweet chocolate, roasted coffee, and charred grain. The grain whisky barrel adds complexity with notes of toasted oak and a subtle spirited depth. Mexican vanilla provides a creamy mid-palate bridge. Bitterness is moderate but balanced by the high residual sugar and oily density. The finish is long and warming, with lingering notes of dark fruit and toasted wood.
Mouthfeel. Full to very full-bodied with an oily, chewy, and luscious texture. Carbonation is low to moderate. Significant alcohol warmth is present and noticeable but remains smooth and well-integrated without harshness.
