This sophisticated Wild Ale, aged since 2023 in Kiss Gábor red wine barrels, presents a complex marriage of rustic fermentation and vinous elegance. The pale base beer is transformed by Brettanomyces into a bone-dry, highly attenuated experience. Aromas of ripe stone fruit and citrus mingle with a developing funk of wet hay and earthy leather, typical of its year-long stay in oak. On the palate, the red wine influence introduces subtle tannins and a whisper of dark berry, complementing the bright, prickly carbonation and a tart, refreshing finish. It is a nuanced, evolving expression of time, wood, and wild yeast mastery.
Appearance. Gold to deep amber (6-9 SRM) with a slight haze. Pours with a moderate white head that shows fair retention but fades to a thin collar, leaving light lacing.
Aroma. High intensity with a complex profile of tropical fruit and apricot esters. Notable barnyard and wet hay funk from the Brettanomyces, layered with vinous red wine notes, toasted oak, and a faint crackery malt backbeat.
Taste. Initial impression is bone-dry and slightly tart. Dominant flavors of stone fruit and lemon zest are followed by earthy, leathery Brett character. The red wine barrel contributes a gentle tannic structure and berry-like fruitiness.
