This Wild Specialty Beer presents a vibrant sensory profile centered on an intense strawberry expression. The experience begins with an aromatic explosion of sun-ripened berries, supported by a subtle, creamy undercurrent of vanilla. On the palate, a sharp, clean lactic sourness dominates, characteristic of its wild fermentation, yet it is expertly balanced by the addition of lactose which provides a rounding sweetness and smooths the acidity. The absence of significant hop character allows the jammy fruit and marshmallow-like vanilla notes to shine. It concludes with a crisp, refreshing tartness that lingers alongside a persistent, natural fruit finish.
Appearance. Deep pink to reddish hue with a hazy, nearly opaque body; pours with a light pink-tinted head that shows moderate retention and fine lacing.
Aroma. High intensity of fresh, jammy strawberries and a noticeable sweet creaminess from vanilla. A clean, lactic tang is present, with very low neutral malt and no detectable hop aroma.
Taste. Initial impression is a sharp, refreshing sourness. Dominant flavors of ripe strawberry and tart berry skins are tempered by a light, milky sweetness from lactose and a touch of vanilla bean. Bitterness is nearly absent, allowing the acidity to provide the structure. The finish is dry and tart but remains fruity and smooth.
Mouthfeel. Medium body with a slightly creamy, velvety texture from the lactose; moderate carbonation provides a lively prickle on the tongue. Alcohol warmth is low and well-integrated.
