On the palate, the experience is bright and thirst-quenching, balancing a sharp lactic tartness with the fleshy, slightly floral notes of apricot. Appearance. Hazy, golden-orange to deep apricot hue (SRM 6-9); pours with a moderate, fine-beaded white head that recedes relatively quickly to a thin collar, leaving minimal lacing due to high acidity.
Aroma. High intensity of fresh and cooked apricot; moderate lactic tartness provides a sharp edge. Very low earthy and leathery wild yeast phenols. Malt character is neutral and cracker-like, while hop aroma is absent.
Taste. Initial impression is sharply tart and fruit-forward. Dominant flavors of tangy apricot skin and sweet fruit flesh. Low bready malt support. Hop bitterness is nearly imperceptible, allowing the lactic acidity to lead the balance. The finish is remarkably dry, clean, and crisp with a lingering apricot aftertaste.
Mouthfeel. Medium-light body with a prickly, high carbonation that enhances the refreshing quality. Alcohol warmth is negligible. A very slight tannin-like astringency from the fruit skins adds structure to the otherwise lean mouthfeel.
