This vibrant American Pale Ale delivers a modern, juicy experience centered on the holy trinity of Citra, Simcoe, and Mosaic hops. The double dry-hopping process yields an intense sensory bouquet of bright citrus and lush stone fruit, underpinned by the resinous, piney depth provided by Chinook. Utilizing a New England yeast strain, the beer achieves a remarkably soft, full-bodied texture that creates a lush, pillowy palate. The result is an exceptionally drinkable, aromatic profile where sweet fruity esters harmonize with a balanced bitterness, offering a contemporary take on the style that emphasizes tropical vibrancy and a smooth, slightly sweet finish.
Appearance. Pale golden to light amber in color (6-8 SRM). It features a moderately large, creamy white head with excellent retention and decorative lacing. While the style traditionally suggests clarity, this modern version exhibits a slight, soft haze due to the double dry-hopping and yeast strain.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit, lime, and tropical mango from the Citra and Mosaic. Simcoe adds a layer of stone fruit and very light pine, while Chinook provides a subtle resinous backdrop. Low bready malt and moderate fruity esters from the yeast support the hop profile.
Taste. The initial impression is an explosion of citrus and stone fruit flavors, mirroring the aroma. A soft, grainy malt sweetness provides a supportive backbone without being heavy. Hop bitterness is moderate and well-integrated, providing enough structure to balance the sweet finish. The fermentation character is clean but fruit-forward, ending with a lingering tropical aftertaste.
Mouthfeel. Medium-full body with a remarkably soft, silky texture. Carbonation is moderate, contributing to the easy-drinking nature of the beer. There is very low alcohol warmth and no detectable astringency, leaving a smooth, rounded impression on the palate.

BREW YORK -Brew York was founded in 2016 by friends Wayne Smith and Lee Grabham. The two met at a mutual friend’s stag do and began home-brewing together after sharing their love and passion for craft beer, and Brew York was born not long after. Starting in 2016, as many other craft breweries were beginning their journey, creating Brew York was the realisation of a long-lived dream to build a brewery in York’s bustling centre with a popular on-site Tap Room, creating a destination where it felt welcoming and inviting to enjoy the beer (and other drinks) right next to the tanks they were brewed in.
We brew all our beer in York, some in our original city centre brewhouse, and now a lot of the beer is brewed 10 minutes up the road in our state of the art production facility in Osbaldwick. Our approach to brewing has always been to produce the types of beers which we would love to drink in can, keg and cask. We love to experiment with ingredients and styles and usually have at least 20 different fresh beers available.
Our beers are inspired by many different things: our rich and diverse surroundings of Yorkshire (Rhubarbra Streisand, Viking DNA and Dame Judi Quench to name a few!), a new hop or ingredient we want to experiment with, a cocktail or dessert we enjoyed over the weekend we want to translate into a beer, as well as finding inspiration in pop culture, films and music which we combine with a desire to create full-flavour and impactful brews. We may well be well-known for our quirky and playful approach to brewing, but everything we do is done with passion and attention to detail.
