This Wild Specialty Beer is a nostalgic sensory journey designed to recreate the experience of a classic raspberry-and-cream lollipop. Vibrant and bold, the profile is defined by a massive addition of fresh raspberry puree, providing a deep, jammy tartness. A generous infusion of vanilla and lactose transforms the thick and juicy kettle sour base into a creamy, confectionery-like treat. The bright acidity of the base beer balances the sugary sweetness, while the vanilla provides a smooth, aromatic bridge between the fruit and the milk sugar, resulting in a lush, dessert-forward character that remains clean and refreshing on the finish.

Appearance. Deep pink to ruby red in color; hazy and opaque appearance. Frothy pink-tinted head with moderate retention and light lacing.

Aroma. High intensity of fresh, jammy raspberry; moderate sweet vanilla and creamy milk sugar notes. A clean lactic sourness is prominent, with no hop character or wild yeast funk present.

Taste. Initial bold tart raspberry flavor followed by a smooth mid-palate of sweet vanilla and lactose. Hop bitterness is non-existent (0 IBU), allowing the lactic acidity to provide the primary balance against the residual sugars. Finishes with a lingering creamy berry sweetness and a clean, tart snap.

Mouthfeel. Medium-full body with a thick, juicy, and creamy texture derived from lactose. Moderate carbonation with no perceived alcohol warmth or fruit-derived astringency.
