Brew Toon Imperial Limoncello is a bold, citrus-forward Wild Specialty Beer that captures the essence of the classic Italian liqueur. Fresh, juicy lemons pierce through the profile with a sharp, blade-like acidity, balanced by the velvety smoothness of creamy lactose and a robust blend of base malts. This anniversary creation offers a sophisticated interplay between the wild, tangy edges of fermentation and a lush, dessert-like mouthfeel. The 7.5% ABV provides a warming backbone that carries the vibrant lemon zest and pithy nuances across the palate, resulting in a complex, refreshing, and indulgent sensory experience that rounds off with a soft, milky finish.
Appearance. Deep straw to pale gold (4–6 SRM); moderate white head with fair retention; hazy to opaque appearance due to the addition of lactose and citrus oils.
Aroma. High intensity of fresh lemon zest and citrus oil; bright lactic tartness and a light funk are present. A distinct creamy, sweet milky note from the lactose blends with a soft, bready base malt character.
Taste. Initial impression is a sharp, punchy lemon acidity followed quickly by a smoothing, sweet creaminess from the lactose. The malt flavor is bready and supportive. Fermentation character is clean but tart, with a lingering lemon pith aftertaste. The balance is surprisingly even between the aggressive citrus acidity and the unfermentable sugars, finishing medium-sweet and coating.
Mouthfeel. Medium-full body, which is heavier than typical for the style due to lactose; moderate carbonation. A noticeable but well-integrated alcohol warmth is present. Smooth, creamy texture with a very slight citrus-derived astringency on the tongue.
