On the palate, the traditional bitterness of the style is rounded by smooth, sweet layers of tonka, vanilla, and marshmallow, creating a rich, velvety mouthfeel. Appearance. Jet black and opaque (40 SRM). Pours with a large, persistent light-brown head that leaves dense, creamy lacing on the glass.
Aroma. High intensity aroma featuring bold roasted coffee and bittersweet chocolate. Prominent festive spice notes of sharp ginger, cinnamon, and nutmeg are layered over sweet, aromatic vanilla and the cherry-almond essence of tonka. Very low resiny hop aroma.
Taste. Initial impression of charred grain and dark chocolate, followed quickly by a spicy warmth from ginger and nutmeg. The firm hop bitterness is significantly softened by the presence of marshmallow and vanilla, which provide a lingering sweetness. Tonka adds complexity with hints of spice and almond, finishing with a balanced blend of roasted malt and sweet spice.
Mouthfeel. Medium-full to full-bodied with a notably creamy and smooth texture. Moderate carbonation. Provides a noticeable but smooth alcohol warmth that is well-integrated and never harsh.
