Brew Hub Keybilly is a refreshing Fruit Beer built upon an Amber Ale foundation, designed for easy drinking under the sun. The sensory experience is defined by the vibrant integration of authentic Key Lime juice, providing a sharp, citrus-forward zing that cuts through the base beer's sweetness. A foundational grist of Pale malt provides a clean, crackery canvas, while Crystal malt contributes subtle notes of toasted biscuit and a hint of caramel. This balance of zesty lime acidity and mellow malt depth creates a crisp, refreshing profile that transports the palate to the Florida Keys, finishing clean with a lingering citrus brightness.
Appearance. Copper to deep amber (SRM 10–14) with a slight haze from the addition of fruit juice. Topped by a dense, off-white head with moderate retention and light lacing.
Aroma. Moderate intensity featuring a dominant, fresh-squeezed Key Lime citrus punch. Supporting the fruit is a light malt sweetness characterized by toasted bread and faint caramel from the Crystal malt. Hop aroma is very low, allowing the fruit and clean fermentation profile to lead.
Taste. Initial impression is a bright, tart burst of lime juice that transitions into a bready malt mid-palate. Low bitterness is present, but the primary structure comes from the citrus acidity. Malt flavors of biscuit and light toffee provide a necessary counterpoint to the lime. The finish is dry and crisp with a lingering, refreshing citrus aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation that enhances the crisp, refreshing character. Alcohol warmth is very low and well-integrated. A slight acidic zing from the lime provides a clean, non-astringent mouth-cleansing effect.
