This Imperial Honey Saison is a powerhouse of rustic complexity, where the high alcohol content is masterfully masked by a dry, spicy finish. The inclusion of honey contributes floral aromatics while lightening the body, allowing the pungent, earthy notes of cumin and the citrusy lift of coriander to shine. Bright orange peel complements the characteristic peppery phenols and fruity esters of the yeast, creating a multi-layered sensory experience. Despite its strength, the beer remains crisp, with the savory depth of cumin providing a unique counterpoint to the floral honey sweetness and firm, zesty bitterness expected of a strong Saison.

Appearance. SRM 6–10; deep gold to light amber with a slight haze from the spices and honey. Thick, creamy, off-white head with excellent retention and significant lacing.

Aroma. High intensity aromatics featuring floral honey, orange zest, and a complex spice profile of peppery coriander and earthy cumin. Strong yeast-derived esters of pear and apple are present, supported by a noticeable but smooth alcohol warmth.

Taste. Initial floral honey sweetness is quickly overtaken by a dry, peppery fermentation character. Flavors of orange peel and coriander provide a bright citrus middle, while cumin adds a persistent, savory, and spicy depth. Bitterness is moderate to firm, balancing the high gravity. The finish is remarkably dry and warming with lingering spice.

Mouthfeel. Medium body with high carbonation that provides a prickly, refreshing effervescence. Significant alcohol warmth is present but well-integrated, lacking harshness. Smooth and slightly creamy despite the dry finish.
