Brekeriet Tio celebrates a decade of wild brewing by blending the vibrant, estery brightness of a four-month-old Saison with the profound, mature depth of a four-year-old sour ale. Both components undergo extensive aging in oak foeders, imparting a nuanced woody structure and subtle vanillins to the profile. The sensory experience is led by a sharp, lemony lactic acidity and tart green apple notes. The older liquid contributes a sophisticated tannic dryness and a whisper of micro-oxidative complexity, while the younger saison provides a foundation of crackery pilsner malt and soft peppery phenols. It finishes bone-dry with a lingering, crisp citrus zing.
Appearance.Pale straw to light gold (3-4 SRM). Displays a slight haze typical of a blended wild ale. Large, frothy white head with poor retention due to high acidity; highly effervescent with visible carbonation streams.
Aroma.High intensity acidity with a sharply sour, lemony character. Prominent fruity esters of tart apple and white peach. The oak foeder aging introduces distinct notes of dried wood and a hint of vanilla. Malt aroma is low, primarily crackery and grainy. No hop aroma is present.
Taste.Clean, dominant lactic sourness with a sharp, puckering initial impression. Features a citrusy fruitiness resembling lemon pith and tart green apple. Very low bready and crackery malt flavor provides a brief support. No hop flavor or bitterness is detected.
