Morgendugg captures the essence of a modern farmhouse ale, merging the rustic traditions of a Saison with the complex wildness of Brettanomyces. This award-winning recipe, born from a homebrew competition, pours a hazy pale gold and releases an aromatic bouquet of spicy black pepper and vibrant citrus esters. As the signature funk of the wild yeast develops, notes of earthy hay and ripe pineapple emerge. On the palate, a soft, grainy malt backbone is quickly overtaken by a firm hop bitterness and a bone-dry, effervescent finish. It is a highly attenuated and refreshing ale that balances traditional Belgian character with a bold, funky complexity.
Appearance. Pale gold (6 SRM). Hazy and unfiltered appearance with a dense, rocky, ivory head that exhibits excellent retention and thick Belgian lacing. Highly effervescent.
Aroma. High aromatic intensity featuring a complex blend of citrus fruit esters and spicy black pepper. A distinct Brettanomyces character provides notes of horse blanket, hay, and a touch of tropical pineapple. Low grainy malt presence with a hint of floral, continental hops.
Taste. Initial impression is refreshing and exceptionally dry. A soft, grainy malt palate is immediate, followed by spicy yeast phenols and moderate-high hop bitterness. Flavors of lemon zest and cracked pepper dominate, evolving into a lingering, funky, and rustic finish with a clean aftertaste.
Mouthfeel. Medium-light body with very high carbonation, creating an effervescent, prickly sensation. Light, well-integrated alcohol warmth. No astringency; crisp and highly attenuated.
