Brekeriet Funkstarter presents as a quintessential farmhouse ale, elevated by a rustic, wild character. This pale Saison delivers an inviting bouquet of citrus and stone fruit esters, intertwined with the distinctive earthy funk of Brettanomyces yeast. The secondary fermentation introduces layers of leather and hay that complement the base’s spicy, peppery yeast profile. On the palate, it is remarkably dry and effervescent, showcasing a soft, grainy malt backbone that yields to a firm, hop-forward bitterness. The interplay between fruity fermentation notes and the farmhouse funk creates a complex, refreshing experience with a lingering, crisp finish that defines the brewery’s signature wild approach.
Appearance.Pale gold (6 SRM) with a slight, persistent haze characteristic of an unfiltered farmhouse ale. It features a dense, rocky, white head with excellent retention and significant Belgian lacing.
Aroma.High intensity with a complex blend of spicy black pepper and fruity esters like lemon zest and pear. The Brettanomyces contributes a prominent funk of damp hay and mild leather, supported by low earthy hop notes and a faint, crackery malt background.
Taste. The initial impression is bone-dry and bright. Malt flavor is low and grainy, quickly followed by medium-high spicy phenols and citrusy fruitiness. Hop bitterness is moderate but appears firm due to the very high attenuation. The Brettanomyces adds a rustic, funky depth that lingers into a very dry, clean, and slightly bitter aftertaste.
Mouthfeel.Light to medium-light body with very high, effervescent carbonation. There is a light, pleasant alcohol warmth and no astringency, resulting in a crisp and refreshing mouthfeel.
