This luxurious Imperial Stout presents an incredibly complex sensory journey shaped by its remarkable multi-barrel heritage. Enticing aromas of dark chocolate, espresso, and molasses mingle with rich molasses-forward Demerara rum, charred American oak, toasted coconut, and a smooth whisper of Irish single malt whiskey. On the palate, a velvety wave of bittersweet cocoa, caramelized sugar, and vanilla gives way to deep dark fruit esters of fig and raisin. The finish is remarkably warm and comforting, balancing robust roasted malts with the sweet, spirituous complexity of aged bourbon, rum, and single malt.
Appearance. Jet black and completely opaque (35-40 SRM). Pours with a thick, dense, deep tan head with moderate retention and slow-falling legs clinging to the glass, indicating high viscosity.
Aroma. High intensity. Complex layers of bittersweet chocolate, roasted espresso beans, and dark caramel malt, beautifully intertwined with prominent barrel-derived notes of vanilla, toasted oak, sweet bourbon, and a deeply ester-rich, molasses-like rum character. Subtle undertones of single malt whiskey and dried dark fruits like raisin and prune emerge as it warms.
Taste. Decadent initial impression of sweet dark-roasted malts, cocoa powder, and black treacle. The mid-palate is dominated by layers of rich rum, toasted coconut, bourbon vanilla, and oak tannins. Hop bitterness is moderate but serves mainly to balance the rich malt and spirit sweetness. The finish is exceptionally complex, lingering with notes of dark chocolate, dried figs, and a smooth, warming spirituous aftertaste that is sweet but never cloying.
Mouthfeel. Full to very full-bodied, thick, chewy, and velvety in texture. Low to moderate carbonation. Noticeable, comforting alcohol warmth that is beautifully integrated and smooth, with low astringency from the oak.
