This collaborative Belgian Golden Strong Ale presents a sophisticated, champagne-like profile defined by its remarkable attenuation and effervescence. The inclusion of Nelson Sauvin hops imparts distinctive notes of crushed white grapes and gooseberry, which seamlessly merge with yeast-driven aromas of ripe pear and a delicate peppery spice. Despite its potent alcoholic strength, the beer remains deceptively light on the palate, showcasing a lean Pilsner malt foundation that allows the vinous hop character to shine. Its bone-dry finish and lively, sparkling carbonation create an elegant sensory experience that balances punchy intensity with a refined, crisp character.
Appearance. Pale yellow to gold (SRM 3-6) with brilliant clarity and visible effervescence. Crowned by a massive, long-lasting, rocky white head that leaves characteristic Belgian lacing as it slowly recedes.
Aroma. High-intensity bouquet dominated by pome fruit esters, specifically pear, and the distinctive white wine and gooseberry character of Nelson Sauvin hops. A soft, peppery alcohol note is present alongside nearly neutral, slightly grainy-sweet malt.
Taste. The palate follows the aroma with prominent pear esters and vinous, herbal hop flavors. A soft, neutral malt presence is quickly overtaken by a medium-high bitterness that is accentuated by the beer's extreme attenuation. It concludes with a long, bone-dry finish and a lingering, clean aftertaste of peppery phenols and white grapes.
Mouthfeel. Medium-light body, appearing much lighter than the high gravity would suggest. Very highly carbonated and effervescent, producing a sparkling mouthfeel. Noticeable but smooth alcohol warmth is present, without being hot or solventy.
