Brauhaus Bevog DREAMS 2023 is a monumental Eisbock that exemplifies luxury and concentration. Originating as a barrel-aged Barleywine before undergoing freeze distillation, this liquid exudes decadence. The sensory profile is dominated by a profound malt depth, offering layers of rich toffee, molasses, and dark chocolate. The barrel aging imparts sophisticated notes of charred oak and vanilla, which harmonize with the intense, spirit-like warmth of the nearly twenty-percent alcohol. Expect concentrated dark fruit cues—reminiscent of raisins and dates—intertwined with a smooth, viscous texture. This is a deliberate exercise in excess, where the complexity of the wood meets the amplified essence of the malt.
Appearance. Deep ebony to dark brown in color with attractive ruby highlights. Good clarity despite the density. Head retention is poor, typical for the style and ABV, often appearing as a thin, fleeting ivory rim. Pronounced, oily legs are evident on the glass.
Aroma. High intensity dominated by rich, intense malt and a definite, spirit-like alcohol presence. Malt character features bready, toasty qualities with heavy caramel and dark chocolate. Significant dark fruit notes like plums, raisins, and grapes. No hop aroma. Clean fermentation profile with prominent barrel-derived vanilla and oak.
Taste. Initial impression is of rich, sweet malt balanced by a massive alcohol presence. Malt flavors include significant Maillard products, toasty notes, and deep caramel. Strong malt-derived dark fruit esters. Hop bitterness is low, just offsetting the sweetness to prevent a cloying character. No hop flavor. The finish is a harmony of rich malt and a notable dryness from the alcohol and wood tannins.
Mouthfeel. Very full-bodied and viscous. Low carbonation. Significant and pervasive alcohol warmth that remains smooth and well-integrated without sharp hotness. Silky and creamy texture with no harshness.
