This seasonal pale Weizenbock delivers an inviting sensory display of yeast-driven complexity and rich grain character. Pronounced aromas of sweet banana, spicy clove, and hints of festive winter spices emerge above a deep, bready backdrop of pale wheat malt. On the palate, a full-bodied, velvety-smooth texture delivers a beautiful interplay of doughy malts and vibrant yeast esters, balanced by a soft, moderate bitterness. Appearance. Deep gold to light amber in color. Dominated by a very thick, dense, moussy white head with excellent retention and beautiful lacing. Shows a distinct, fine yeast haze with a soft, inviting sheen from the suspended yeast.
Aroma. High intensity. Prominent yeast-derived esters of ripe banana and spicy phenols resembling clove and light nutmeg, accompanied by festive, warm holiday spice undertones. Rich, bready, and sweet doughy wheat malt character forms a strong aromatic foundation. Hop aroma is completely absent. Clean fermentation with a very subtle, integrated warming alcohol note.
Taste. Rich and highly complex initial impression. Dominant bready, sweet, and slightly toasty pale wheat malt flavor. This is balanced beautifully by moderate banana esters and spicy clove yeast character. Hop flavor is absent, and the hop bitterness is low to moderate, serving only to keep the sweet malt from cloying. Finishes relatively dry, soft, and creamy, with a lingering aftertaste of spiced banana bread and gentle alcohol warmth.
Mouthfeel. Medium-full to full body with a remarkably soft, fluffy, and creamy texture. Carbonation is moderate to high, providing a lively sparkle that lifts the heavy grist. Exhibits a mild, pleasant alcohol warmth without being hot or solventy. No astringency.
