La Perla offers a vibrant, modern take on the historical Gose, delivering a sharp sensory profile defined by its low alcohol and high refreshment. An immediate burst of zesty lime dominates the foreground, supported by the subtle, earthy perfume of habanero pepper skin. The underlying wheat base provides a soft, bready foundation that balances a clean lactic acidity. A delicate saline minerality rounds out the palate, while the habanero introduces a faint, flickering warmth rather than aggressive heat. Effervescent and dry, this sessionable ale concludes with a bright, citrusy finish that highlights the refreshing interplay between salt, lime, and spice.
Appearance. Pale yellow (3 SRM) with a moderate to full haze. It carries a tall, white head with tight bubbles and very good retention, showing high effervescence.
Aroma. High intensity aromatics of fresh lime zest and citrusy coriander. A clean, sharp lactic sourness is dominant, backed by a doughy, wheat-heavy malt character. Subtle floral and spicy notes from the habanero peppers emerge as the beer warms, without being overwhelming.
Taste. Initial impression is a crisp, medium-high lactic tartness accompanied by bright lime juice flavors. The mid-palate reveals soft, bready wheat malt and a restrained saltiness that enhances the mouthwatering quality. Bitterness is very low; the finish is bone-dry and acidic with a lingering, gentle habanero pepper flavor and a delicate, prickly spice.
Mouthfeel. Medium-light body with very high, prickly carbonation. The addition of salt contributes a smooth, rounder texture that offsets the thinning effect of the acidity. A very subtle, tingling warmth from the habanero capsaicin is present on the finish.
