This elevated Belgian Tripel presents a sophisticated marriage of rustic fermentation and botanical complexity. The aroma is led by a bold, piney juniper character and herbal gin notes from three months in Genièvre de Houlle barrels, layered over classic peppery phenols and bright lemon esters. On the palate, a soft, honey-like malt foundation is quickly superseded by a firm, resinous bitterness and wood-derived spice. Despite its 9.5% ABV, the beer remains effervescent and remarkably dry, finishing with a lingering, spirited warmth and a clean, botanical snap that highlights both the base style's elegance and the unique barrel influence.
Appearance. Deep gold to light amber in color (6–7 SRM) with a slight haze from barrel aging. It features a long-lasting, rocky, creamy white head that leaves dense Belgian lace.
Aroma. High intensity bouquet featuring prominent piney juniper berries and botanical gin-like notes. Seamlessly integrated with peppery phenols, citrusy esters (lemon peel, orange), and a soft, grainy-sweet malt backdrop with a hint of toasted oak.
Taste. Initial impression of spicy yeast and resinous juniper. The malt provides a light honeyed sweetness that is quickly balanced by moderate to high bitterness. Flavors of clove, white pepper, and herbal gin botanicals predominate, leading to a very dry, crisp finish with a lingering wood-spice aftertaste.
Mouthfeel. Medium-light body with a highly effervescent, prickly carbonation. The high alcohol content provides a noticeable but well-integrated warmth without being heavy or syrupy.
