Trompette is a lush Imperial Pastry Sour, classified as a Wild Specialty Beer, that delivers a decadent sensory experience. The grist of barley, wheat, and oats creates a velvety foundation, enhanced by lactose and brown sugar for a thick, dessert-like profile. Prominent aromatics of roasted pineapple and jammy apricot dominate the nose, while Celeia hops provide a very subtle spicy undertone. The vanilla addition rounds out the sharp lactic acidity, resulting in a complex balance of tartness and creamy sweetness. At 8.1% ABV, the beer exhibits a well-integrated warmth that supports the intense fruit character and rich mouthfeel.
Appearance. Deep golden to amber-orange (10-14 SRM) with a heavy, opaque haze from the fruit puree and high oat/wheat content. Pours with a moderate, creamy, off-white head that has fair retention and leaves light lacing.
Aroma. High intensity of tropical and stone fruits; distinct caramelized pineapple and ripe apricot jam. Sweet notes of vanilla bean and toasted brown sugar are prominent. Malt character is bready and sweet. Very low spicy hop aroma from Celeia. Clean lactic acidity is present without significant funk.
Taste. Initial impression is a burst of sweet roasted pineapple followed by tangy apricot. A smooth malt backbone of wheat and oats provides a bready, silky texture. Medium-high lactic sourness is balanced by the residual sweetness of lactose and vanilla. Hop bitterness is very low, allowing the fruit to lead. The finish is long and sweet-tart, with lingering notes of caramelized fruit and cream.
Mouthfeel. Medium-full to full body with a thick, creamy, and coating texture. Moderate carbonation. A noticeable, well-integrated alcohol warmth is present. Smooth mouthfeel with no perceived astringency from fruit skins or hops.
