This Double IPA showcases the singular power of the Simcoe hop variety, built upon a foundation specifically designed for a silky, hazy presentation. The sensory journey is dominated by the specific aromatic footprint of Simcoe, leading with punchy citrus and bright lemon resin. As the palate develops, deeper notes of fresh pine and a subtle herbaceous edge emerge, characteristic of this versatile hop. Despite its 7.5% strength, the beer maintains high drinkability through a velvety mouthfeel and a moderate bitterness that tames the intense hop saturation, finishing clean with a lingering resinous complexity and soft, grainy malt support.
Appearance. Pours a hazy gold to pale orange with a moderate-sized, persistent off-white head that leaves consistent lacing on the glass.
Aroma. Intense hop aroma featuring prominent Simcoe characteristics of citrus peel, lemon resin, and fresh pine needles. A secondary herbaceous note is present, supported by a very low, neutral, grainy malt background and a clean fermentation profile.
Taste. Strong and complex hop flavors of bright citrus and resinous pine. The malt character is low and unobtrusive, providing a soft, crackery base. Bitterness is moderately high but smooth, avoiding harshness. The finish is medium-dry with a lingering hoppy and resinous aftertaste, balanced by a light, clean alcohol presence.
Mouthfeel. Medium-full body with a notably silky and velvety texture. Carbonation is moderate. A smooth, restrained alcohol warmth is present, without any hop-derived astringency.
