This sparkling pale gold Saison delivers a brilliant sensory experience, defined by its extreme dryness and elegant hop profile. Brewed as an extra brut, it showcases the distinctive Nelson Sauvin hop variety, which unleashes vibrant aromas of gooseberry, crushed white grapes, and fresh Sauvignon Blanc. A rustic, peppery Belgian yeast character blends seamlessly with these vinous notes, supported by a faint, grainy wheat malt backbone. Effervescent and exceptionally crisp, this farmhouse ale finishes bone-dry with a lingering, delicate bitterness, making it a remarkably refreshing, wine-like interpretation of the classic Belgian style.
Appearance. Pale gold with brilliant clarity. Pours with a towering, dense, rocky white head that exhibits exceptional retention and leaves intricate, curtain-like Belgian lacing on the glass.
Aroma. High-intensity aroma driven by prominent vinous and fruity esters. Distinct white wine notes of gooseberry and passionfruit from the hops dominate. This is complemented by moderate spicy Belgian yeast phenols resembling black pepper, along with light pear esters and a low, rustic, grainy wheat malt backdrop.
Taste. The initial impression is bone-dry and effervescent. Crisp, rustic cracker and light grainy malt flavor quickly gives way to a burst of white wine grapes and gooseberry. Hop bitterness is moderate, enhanced by the highly attenuated profile to yield a crisp, bracing balance. Phenolic yeast notes of black pepper add complexity, leading to an extremely dry finish with a lingering, refreshing vinous aftertaste.
