Brasserie La Fosse's Salmo is a quintessential Hazy IPA, delivering a vibrant sensory experience defined by its juicy core. At 5.5% ABV, it balances sessionable accessibility with intense hop saturation. The profile is led by a tropical bouquet of stone fruit and citrus, supported by a clean, bready malt backbone. Its appearance is characterized by a signature opaque glow and a persistent meringue-like head. On the palate, the soft, rounded mouthfeel masks a restrained bitterness, allowing flavors of ripe mango and orange zest to linger. It captures the modern New England style perfectly, prioritizing aromatic depth and a smooth, refreshing finish.
Appearance. Straw to light amber (3–7 SRM) with a pronounced, opaque haze that gives the liquid a subtle shine. Features a medium-sized, white, meringue-like head with high retention and sticky lacing.
Aroma. High intensity hop aroma with dominant notes of tropical fruit, peach, and bright citrus. Supported by a clean, neutral, grainy-bready malt character in the background. Fermentation is clean with supportive fruity esters and no buttery diacetyl or acidic notes.
Taste. High fruity hop flavor featuring mango, passionfruit, and sweet citrus. Low bready malt flavor provides a neutral foundation. Perceived bitterness is moderate-low and well-masked by the soft body. The finish is off-dry to medium with a smooth, juicy aftertaste devoid of any harsh hop bite.
Mouthfeel. Medium body with a soft, silky texture. Moderate carbonation provides a gentle lift. Very light alcohol warmth is well-integrated. No astringency, raw starchiness, or acidic twang.
