Panacée is a refreshing Wild Specialty Beer that radiates tropical vibrancy and stone fruit depth. Dominated by lush additions of peach and mango purees, the sensory profile is further amplified by HBC 1019 hops, which contribute distinctive candy-like jujube notes and reinforce the natural peach character. A generous foundation of oats and wheat, combined with lactose and subtle vanilla, creates a velvety, dessert-like softness that balances the bright lactic acidity. The result is a harmonious blend of tartness and creamy sweetness, offering a sophisticated take on a fruited sour that feels both light and indulgently textured.
Appearance. Hazy, pale orange to apricot in color (4-6 SRM) with a slight peach-tinted hue. Features a moderate-to-low white head with fair retention and minimal lacing, common in fruited sours.
Aroma. High intensity of ripe peach and tropical mango purees. Substantial candy-like notes of jujube and stone fruit from the HBC 1019 hops. Light lactic tartness is present, softened by a delicate aroma of vanilla and a faint, sweet doughy character from the wheat and oats.
Taste. Initial impression is a bright, clean lactic acidity immediately followed by a burst of fleshy peach and mango. The hop flavor mirrors the aroma with sweet candy and jujube notes. Medium-low sweetness from lactose and vanilla provides a counterpoint to the tartness. The finish is clean and fruity with a lingering creamy grain character from the oats. Bitterness is nearly imperceptible.
Mouthfeel. Medium body with a notable creaminess and smooth texture due to the addition of oats, wheat, and lactose. Carbonation is moderate. Alcohol warmth is absent. Very low astringency despite the heavy fruit presence.
