Brasserie Galibier’s Deep Cut is a formidable Double IPA that emphasizes tropical intensity over malt weight. The sensory experience is dominated by a punch of ripe pineapple, leading an aromatic charge of resinous pine and citrus zest. At 8.2% ABV, it presents a lean, efficient body that allows the hop character to remain the sole focus without the interference of heavy caramel or residual sugar. The palate is defined by high bitterness that stays clean rather than harsh, finishing remarkably dry with a lingering tropical aftertaste. It balances power with drinkability, offering a smooth, warming sensation that complements its vibrant fruit-forward profile.
Appearance. Deep gold to light orange-copper (7-11 SRM). Brilliant clarity with a dense, persistent off-white head that leaves consistent lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of fresh pineapple and tropical fruit. Supported by light citrus zest and a background of resinous pine. Malt character is neutral and grainy, providing a clean canvas for the hops. Fermentation is clean with a very light alcohol presence.
Taste. Bold pineapple and tropical fruit flavors lead, followed by a firm, resinous hop bitterness that is moderately high but smooth. Very low malt character with just a hint of bready sweetness. The finish is dry to medium-dry, leaving a clean, lingering bitterness and fruit skin notes without harshness.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is medium-high, providing a crisp bite. A gentle, well-integrated alcohol warmth is present, adding to the beer's strength without being solventy or hot.
