This sophisticated Saison showcases a vibrant marriage of farmhouse tradition and viticulture. A blend of barrel-aged ales rested on New York Muscat grape pomace, it opens with a perfumed bouquet of lychee, elderflower, and white grape skins. The palate is defined by the rustic, grainy character of a classic farmhouse ale, accented by the floral elegance of the Muscat grapes and a delicate tannic structure from its time in the wood. Effervescent and bone-dry, it balances spicy black pepper phenols with a bright, vinous acidity. The finish is crisp and lingering, highlighting the complex intersection of wild yeast and premium pomace.
Appearance. Luminous golden-orange with a slight, hazy yeast cloud (10 SRM). Topped by a dense, persistent ivory head that leaves intricate Belgian lacing as it recedes.
Aroma. High intensity aromatics lead with floral New York Muscat grapes, reminiscent of honeyed apricot and tropical lychee. Underlying this is a complex peppery yeast profile, subtle toasted oak, and a faint, rustic cracker-like malt presence.
Taste. The initial impression is dry and vinous, bursting with white grape must and citrus zest. A moderate hop bitterness is present but integrated with the spicy, peppery fermentation character and a mild tannic pull from the barrels. The finish is exceptionally dry and clean, with a lingering echo of floral fruit and earthy oak.
