This complex Saison emerges from an expert blend of barrel-aged mixed-fermentation ales, resulting in a rustic and deeply expressive profile. The infusion of Saskatoon berries imparts a distinctive layer of dark fruit, reminiscent of wild blueberries and black currants, with a characteristic almond-like nuttiness derived from the berry seeds. These elements weave into the farmhouse base of spicy black pepper phenols and subtle pome fruit esters. Oak aging contributes refined tannins and a hint of vanilla, while the mixed culture introduces a delicate, bright acidity that elevates the earthy, grainy malt backbone, finishing bone-dry and effervescent.
Appearance. Deep amber with distinct garnet highlights from the berry infusion; SRM 12–15. Features a persistent, dense, ivory-to-pale-pink head with excellent lacing. Clarity is hazy due to the unfiltered nature of the mixed fermentation and fruit solids.
Aroma. High intensity with a sophisticated balance of spicy Belgian yeast and earthy Saskatoon berries. Notes of cracked black pepper and stone fruit are joined by an almond-like nuttiness, light leather funk, and soft oak vanillin. A subtle, bright lactic tartness underpins the bouquet.
Taste. Initial impression is bone-dry and lively. Complex flavors of dark berries, cherry skin, and a rustic, grainy malt character lead the palate. The yeast provides a firm peppery spice that complements a moderate hop bitterness. The finish is notably dry and lingering, with a mild tannic structure from the fruit and barrel aging, followed by a clean, tart aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation that provides a prickly, refreshing sensation. Very light alcohol warmth is well-integrated. Features a mild, pleasant tannic astringency from the berry skins and oak wood.
