Brasserie Dunham

This rustic Belgian Single delivers an enticingly complex and refreshing sensory experience, driven by its mixed fermentation of farmhouse yeast and Brett Drei. On the nose, Brett Drei introduces vibrant, funky aromas of fresh pineapple, underripe peach, and subtle leather, beautifully complementing the distinct melon, sweet strawberry, and soft apricot notes contributed by dry hopping with Huëllmelon. Pale straw and effervescent, it opens with a light, crackery malt base before yielding to a moderately bitter, brilliantly dry finish. The wild yeast and fruit-forward hops linger in a clean, highly carbonated, and endlessly drinkable table beer.

Appearance. Pale straw-yellow with a slight, beautiful haze from dry-hopping and mixed fermentation. Crowned by a dense, voluminous, billowy white head with outstanding retention and delicate lacing.

Aroma. High intensity. Prominent mixed-fermentation character features rustic barnyard funk, wet hay, and tropical pineapple esters from Brett Drei, balanced by peppery phenols. Dry-hopping with Huëllmelon introduces bright notes of ripe honeydew melon, strawberry, and soft apricot, all resting on a delicate, crackery malt backdrop.

Taste. Bone-dry and exceptionally crisp. Soft, crackery Pilsner malt flavors are immediately overtaken by expressive farmhouse yeast esters of pear and pineapple, alongside spicy black pepper phenols. Moderate, snappy bitterness is amplified by the extreme dryness, showcasing a distinct Huëllmelon hop profile of cantaloupe and summer berries. The finish is remarkably clean, dry, and refreshing, with lingering wild funk and soft fruitiness.

Mouthfeel. Light to medium-light body with a very crisp, effervescent, and prickly high carbonation. Exceptionally dry and highly refreshing, with a faint, clean, thirst-quenching lactic acidity from the mixed fermentation. Completely devoid of alcohol warmth.
