This Imperial Stout presents a monumental sensory experience, defined by thirty-two months of maturation in Willett Rye barrels. The extended aging creates an intricate tapestry of bittersweet dark chocolate and charred oak, interwoven with the signature spicy character of rye whiskey—evoking notes of black pepper and dried herbs. Deep layers of black cherry, molasses, and leather emerge from the prolonged oxidation, while the high gravity provides a velvety, viscous core. The finish is remarkably persistent, offering a harmonious blend of roasted malt bitterness and the refined warmth of its 11.9% alcohol content, leaving a lingering impression of vanilla and toasted tobacco.
Appearance. Jet black and completely opaque (40 SRM). A small, dense, dark tan head shows moderate retention, leaving thick, oily legs on the glass as the beer swirls.
Aroma. High intensity. Dominant aromas of espresso and dark cocoa are layered with spicy rye whiskey notes, toasted oak, and vanilla bean. Substantial dark fruit esters reminiscent of figs and raisins are present, alongside a subtle vinous quality and notes of black licorice from extended barrel aging.
Taste. Intensely flavorful with a complex blend of bittersweet chocolate, roasted grain, and spicy wood tannins. The Willett Rye barrel influence contributes a sharp, peppery spice that cuts through the rich malt sweetness. Medium-high bitterness balances the initial caramel and molasses notes, leading to a long, warming finish with echoes of leather and charred grain.
Mouthfeel. Full to very full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the creaminess. A significant but smooth alcohol warmth is present and well-integrated into the finish.
