This Belgian Tripel presents a sophisticated profile where traditional monastic yeast meets an herbal twist. A creamy, long-lasting foam crowns the deep gold liquid, releasing a bouquet of peppery phenols and citrusy esters. The inclusion of juniper berries introduces a surprising, fresh herbal layer that complements the spicy yeast character. On the palate, a firm bitterness provides structure, leading to a long, dry finish typical of the style. The malt provides a soft, grainy-sweet foundation without becoming heavy. Effervescent and bright, it balances its 7% strength with a refreshing crispness and a complex, lingering aftertaste of gin-like botanicals and spice.
Appearance. Deep gold to pale amber (6 SRM) with brilliant clarity. A thick, rocky, long-lasting white head provides persistent Belgian lace as it fades.
Aroma. Moderate to high intensity with a complex blend of peppery phenols and lemon-like esters. The juniper berries contribute a distinct piney and floral freshness. Light, grainy-sweet malt provides a subtle, honey-like background note.
Taste. Initial spicy and herbal impressions transition to a soft, grainy malt flavor. Firm bitterness persists through a very dry finish, accentuated by a moderate hop character. Flavors of orange peel, clove, and gin-like juniper berries linger in a clean, refreshing aftertaste.
Mouthfeel. Medium body with high, effervescent carbonation. The texture is creamy and smooth, with very low, well-integrated alcohol warmth that remains deceptive and highly drinkable.
