This 2019 vintage Grand Cru from BFM offers a complex, barrel-aged interpretation of a Straight Sour Beer. Having spent eighteen months in a combination of red wine and Ruby Port barrels, the sensory profile is defined by a sophisticated interplay of sharp lactic acidity and deep vinous complexity. Aromas of tart lemon and green apple are layered with rich notes of dark berries, plum, and oak from the Ruby Port influence. At 11% ABV, the palate is robust, balancing a crisp sourness with a lingering, fortified wine sweetness. It represents a masterful marriage of traditional souring and meticulous wood aging.
Appearance. Deep gold to burnished amber with distinct ruby highlights (SRM 10–14). Clarity is slightly hazy due to extended aging. Head is thin, white, and dissipates quickly with low retention, leaving minimal lacing.
Aroma. High intensity lactic sourness that is sharply acidic. Malt character is low but provides a biscuity backbone. Significant fruity esters of tart apple and lemon are present, seamlessly integrated with the vinous, oaky, and dark fruit notes of the Ruby Port barrels.
Taste. Clean, aggressive lactic sourness dominates the initial impression. A grainy and biscuity malt flavor provides a brief foundation before being overtaken by complex notes of red wine and dark cherries. No detectable hop flavor or bitterness. The finish is off-dry and lingering, with a pleasant acidic snap.
Mouthfeel. Medium-full body, possessing more weight than typical for the style. Carbonation is moderate. Significant, smooth alcohol warmth is present, complemented by a crisp acidity and a slight vinous astringency.
