This celebratory Bi re de garde ambr e presents a complex evolution of the Irish Red Ale profile, amplified to a bold strength. A foundation of toffee and caramel malts provides a rich, bready sweetness, while the addition of oak chips introduces elegant layers of vanilla and dry wood. The unique fermentation blend, incorporating a small percentage of Brettanomyces, lends a subtle rustic depth and a crisp, vinous edge to the finish. Warming and sophisticated, it balances traditional toasted grain notes with the smooth, tannic structure of barrel-aged character, resulting in a refined, malt-forward experience with significant depth.
Appearance. Deep reddish-copper to medium amber (12–14 SRM) with excellent clarity. It supports a dense, tan-colored head with moderate persistence and light lacing on the glass.
Aroma. Moderate malt intensity featuring distinct notes of toffee, toasted bread, and caramel. The oak aging contributes a soft vanilla and woody perfume, while a whisper of Brettanomyces adds a very faint earthy or leathery complexity. Low floral hop notes are present, backed by a noticeable but clean alcohol warmth.
Taste. Initial impressions of sweet caramel and rich toffee lead into a grainy, biscuity mid-palate. A light roasted grain character emerges toward the end, providing a signature dryness typical of the style. The oak provides a structural woody flavor, complementing the mild earthy bitterness. The finish is medium-dry and smooth, with a lingering warmth and a hint of rustic fruitiness from the yeast blend.
Mouthfeel. Medium-full body with a smooth, slightly creamy texture. Carbonation is moderate, providing a gentle lift against the significant alcohol warmth. A very light tannic astringency from the oak chips adds a sophisticated grip to the finish.
