Brasserie Chromatique

This Double IPA delivers a formidable hop punch driven by a potent Double Dry Hop addition. An intense aromatic bouquet of tropical berries and stone fruit from Mosaic merges with the zesty, citrus-forward character of Cascade and the wild, resinous notes of Comet. The sensory experience is dominated by these modern American hops, supported by a clean, neutral malt backbone that allows the bitterness to remain assertive but smooth. Despite its strength, the finish is remarkably dry and crisp, emphasizing drinkability while showcasing a complex, layered hop profile that lingers long after the first sip.

Appearance. Deep gold to light copper (8-10 SRM). Displays a moderate, persistent off-white head with fine lacing. Clarity is clear with a slight hazy sheen characteristic of heavy dry-hopping.

Aroma. High intensity hop aroma featuring prominent notes of ripe mango, blueberry, and passion fruit from Mosaic, complemented by grapefruit rind from Cascade. Hints of zesty lime and a touch of wild resin from Comet are present. Malt is low, appearing as neutral grainy-sweetness in the background. Fermentation is clean with very low esters.

Taste. Initial impression is an explosion of hop flavors: tropical fruit, citrus, and pine. Malt flavor is low and soft, providing just enough support for the high but smooth bitterness. Mosaic adds berry and melon complexity, while Comet contributes a sharp, citrusy edge. The finish is dry to medium-dry with a lingering, clean hoppy bitterness and no harshness.

Mouthfeel. Medium body with a smooth texture. Carbonation is moderate to medium-high. A light, pleasant alcohol warmth is present but well-integrated, with no hop-derived astringency.
