Brasserie Atrium’s Cherry Dubbelbock is a decadent fusion of German tradition and Belgian flair. Built on a robust Doppelbock grist of Munich and Vienna malts, it pours a deep mahogany with brilliant ruby highlights from the infusion of black cherries. The aroma is a complex tapestry of rich Maillard products, toasted bread, and dark stone fruits, elevated by the spicy phenols and fruity esters of Abbaye yeast. On the palate, luscious layers of sweet cherry and dark chocolate meld with a velvety, full-bodied texture. Appearance. Deep copper to dark brown with prominent ruby highlights from the black cherry infusion. Topped by a dense, persistent, off-white to light tan creamy head with excellent lacing. Clear despite the fruit addition.
Aroma. Intense malt-forward profile featuring deep toasted bread, caramel, and light chocolate. Pronounced aromas of ripe black cherries provide a tart, fruity counterpoint. The Abbaye yeast adds sophisticated layers of plum, raisin, and a hint of peppery spice, complemented by a noticeable but well-integrated alcohol presence.
Taste. Extremely rich and malty, dominated by flavors of toasted crust, dark fruit leather, and a hint of cocoa. The black cherries offer a bold, slightly tart sweetness that balances the heavy malt base. Low bitterness allows the malt and fruit to shine, while the Belgian yeast contributes subtle clove and dark ester complexity. Finishes moderately sweet yet smooth, with a long, warming aftertaste.
Mouthfeel. Full-bodied and viscous with a smooth, velvety texture. Carbonation is moderate to moderately low, enhancing the beer’s richness. A significant, pleasant alcohol warmth is present, consistent with its high gravity, without being harsh or fusel.
