Brasserie 28 Pale Ale
This Belgian Pale Ale presents a modern twist on the classic Spéciale Belge, showcasing a vibrant citrus-forward character derived from Simcoe dry hopping. The sensory journey begins with a pronounced aromatic profile of lemon and grapefruit, supported by a backbone of bready and toasty malt notes. Reflecting the brewery's signature focus on high attenuation, the palate is exceptionally dry and refreshing, stripping away residual sugars to highlight a crisp, clean finish. The naturally fine carbonation provides a lively lift, balancing the subtle toasted malt complexity with a refreshing, hop-accented bite that lingers briefly without any cloying sweetness.
Appearance. Amber to copper (approx. 10-12 SRM) with very good clarity. It supports a creamy, rocky, white head with good retention and fine lacing.
Aroma. Moderate intensity featuring distinctive citrus and pine notes from Simcoe dry hopping. The hop character is backed by a moderate bready and toasty malt aroma. Subdued yeast-derived esters of pear and orange are present, with very low peppery phenols.
Taste. Initial impression is crisp and lean, leading into a malt profile of toasted bread and biscuits. Hop flavors of grapefruit and lemon zest are moderate, supported by a medium bitterness that feels firm due to the highly attenuated, dry finish. Fermentation character is clean with light fruitiness and no lingering sugar.
Mouthfeel. Medium-light body with a smooth but very dry palate. Carbonation is moderate to high with a fine, light bubble structure. Alcohol warmth is negligible, and there is no perceived astringency.
