Brasserie 28 Imperial Stout

Imperial Stout 12 º 60 IBU
This Imperial Stout presents a sophisticated sensory journey, defined by its formidable 12% ABV and intricate adjunct profile. The experience begins with an intense bouquet of Robusta coffee and dark chocolate, layered over a foundation of savory smoked malt. Aging in whiskey barrels introduces nuanced notes of honey and charred oak, which meld with the dark fruit esters. On the palate, the beer is remarkably powerful yet deceptively drinkable, featuring a persistent roast character. A subtle, spicy finish from chipotle chili provides a warm counterpoint to the rich, caramel-driven sweetness, culminating in a complex, lingering aftertaste of dried fruits and espresso.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a dense, cappuccino-colored head that exhibits good retention and leaves thick lacing on the glass. High alcohol and viscosity are visible as legs upon swirling.
Aroma. High intensity aroma dominated by rich Robusta coffee, bittersweet chocolate, and a distinct smoky note from the specialty malt. Complex whiskey-derived notes of honey, vanilla, and oak are prominent. Moderate esters of prune and raisin are present, with very low earthy hop character and a clean, noticeable alcohol presence.
Taste. The initial impression is a powerful wave of roasted grain, espresso, and dark cocoa. The smoked malt adds a savory dimension that integrates with whiskey barrel sweetness and honey-like flavors. Hop bitterness is firm and well-balanced by the massive malt backbone. The finish is long and complex, featuring a unique, gentle heat from chipotle chili and a lingering coffee aftertaste.
Mouthfeel. Full-bodied and velvety with a thick, chewy texture. Carbonation is moderate, providing enough lift to prevent the beer from feeling syrupy despite its strength. A significant, smooth alcohol warmth is present, reflecting the 12% ABV, while the chipotle adds a very slight, pleasant tingle without harsh astringency.
