Brasseria Della Fonte Petite Ruche

This farmhouse-style Saison presents a rustic and deeply complex profile driven by the brewery's own malts and the nuanced addition of chestnut honey. The aroma opens with a vibrant mix of pome fruit esters and cracked black pepper, layered over the earthy, leathery funk of Brettanomyces. On the palate, the chestnut honey contributes a distinct herbal and slightly nutty depth without adding residual sugar, as the beer is fermented to a signature bone-dry finish. A firm hop bitterness balances the grainy malt backbone, while the 7% alcohol provides a refined warmth. Effervescent and textured, it concludes with a lingering, spicy, and wild-yeast-inflected aftertaste.
Appearance. Deep gold to amber (10–14 SRM) with a slight, rustic haze. It supports a long-lasting, dense, rocky ivory head that leaves persistent Belgian lace on the glass.
Aroma. High intensity featuring a complex bouquet of fruity esters like apple and pear alongside spicy phenols reminiscent of black pepper. The chestnut honey adds unique floral and herbal notes, while the Brettanomyces provides a moderate earthy, barnyard character. Grainy malt character remains supportive and fresh.
Taste. Initial impression is bright and highly attenuated, moving into a soft, grainy malt palate. Hop bitterness is moderate-high and provides a clean counterpoint to the spicy yeast and herbal chestnut honey notes. The Brettanomyces adds a dry, leather-like complexity. The finish is exceptionally dry and crisp with a lingering peppery and bitter aftertaste.
Mouthfeel. Medium body with very high carbonation that feels prickly and effervescent on the tongue. A light, well-integrated alcohol warmth is present, providing a smooth but rustic texture with no astringency.
