Final Copy is a potent Double IPA that exemplifies the modern, hazy evolution of the style, pushing into Triple IPA territory with its 9.5% ABV. The sensory profile is defined by a massive saturation of Peacharine hops, which impart intense aromas of ripe nectarine and stonefruit. These are artfully balanced by the bright, citrusy lime character of Motueka hops. The experience is centered on a super soft, pillowy mouthfeel that masks the high alcohol content. While the hop bitterness is firm, it remains smooth, allowing the lush fruit esters to lead into a clean, warming, and tropical finish.
Appearance. Deep gold to light orange (6-9 SRM) with a very high level of haze, presenting as opaque. It features a thick, persistent, creamy white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma dominated by stonefruit—specifically peach and nectarine—derived from Peacharine hops. Subtle citrus notes of lime and zest from Motueka are present. The malt is neutral and supportive, while the fermentation profile is clean with a light, integrated alcohol sweetness.
Taste. Strong hop flavors of apricot, peach, and tropical citrus lead the palate. The bitterness is firm (consistent with the high IBU range of the style) but lacks harshness, balanced by a soft, grainy malt backbone. The finish is medium-dry with a lingering nectarine fruitiness and a smooth, clean alcohol presence that enhances the hop character.
Mouthfeel. Medium-full body with a notable creaminess and super soft, silky texture. Carbonation is moderate. A noticeable but well-integrated alcohol warmth is present, without any harsh hop-derived astringency.
