This Berliner Weisse presents a vibrant, contemporary twist on the classic style, utilizing a house Lactobacillus culture for a clean, sharp acidity. The infusion of succulent Plum and tart Cherry provides a deep stone fruit character that intertwines with the delicate, bready wheat base. The addition of Tonka Bean introduces sophisticated aromatic layers of vanilla, toasted almond, and warm spice, smoothing out the aggressive tartness. This beer balances high effervescence with a rich fruit profile, resulting in a refreshing yet complex experience that elevates the traditional sourdough-like profile with a luxurious, jammy depth and a crisp, lingering finish.

Appearance. SRM 10-14; deep reddish-pink to light purple hue; hazy to opaque due to heavy fruit additions and wheat proteins; large, dense, light pink head with poor to moderate retention; highly effervescent.

Aroma. Moderate to high intensity; sharp, clean lactic sourness dominates; low malt presence of raw bread dough and sourdough; prominent stone fruit notes of jammy plum and tart cherry; distinct tonka bean influence suggesting vanilla, cinnamon, and almond; no hop aroma.

Taste. Strong, clean lactic acidity; moderate bready and grainy wheat flavor provides a structural base; intense fruit flavors of tart cherry and sweet plum; the tonka bean contributes complex notes of vanilla and spice; hop bitterness is undetectable, balanced entirely by acidity; very dry and crisp finish with lingering fruit and spice.
